I have to admit I was pretty busy at the office these past two weeks, so I neglected the blog a lot..sorry about that..I wish I could stay home and write my blog instead of going to an office and sit in front of a laptop, but I can’t for now…maybe soon :).
I still cooked though, and I have some new pictures and a recipe from the Hummingbird bakery cookbook to share with you :).
Here a picture of the lovely tasty muffins before we start working:
Ingredients:
50 gr butter
1/2 small shallot finely chopped
80 gr button mushrooms chopped
360 gr plain flour
2 1/2 tsp baking powder
250 gr cheddar cheese grated
220 ml whole milk
1 egg
80 gr smoked ham ( I used smoked bacon instead)
sea salt and fresh ground pepper to taste
makes 12
Method:
Melt the butter and saute the chopped onions and mushrooms until tender. Season with salt and pepper and set aside.
In a bowl mix the dry ingredients: flour, baking powder and cheese. In a separate bowl mix the milk and egg together and start pouring it in the flour mixture and mix until everything is well combined.
Stir in the onion mixture and ham and mix with a wooden spoon until evenly dispersed.
Spoon the mixture into the paper cases until two-thirds full and bake in a preheated oven (170C) for 30-35 minutes or until deep golden and a skewer inserted in the middle comes out clean. Leave the muffins in to cool slightly in the tray before turning out onto a cooling rack to cool completely.
Trust me they are absolutely delicious!!
