We were craving for lentils for sometime now, and I decided that a Sunday is a good day to have some lentils, with vegetables, bacon and served with some homemade Naan bread.
250 gr green lentils
4 slices of bacon
1 orange pepper
2 small carrots
6 plum tomatoes
2 garlic cloves
2 tbsp tomatoes paste
1 tsp ground cumin
½ tsp hot paprika
1 tbsp extra virgin olive oil
salt to taste and a pinch of pepper
Heat a pan and add the olive oil, than add the chopped onion, bacon, pepper and diced carrots, together with garlic – finely sliced. Saute all the vegetables for 5 minutes, than add the lentils and saute for another 2 minutes. Add water to cover the lentils – I added around 400gr of water. Cover with a lid and let it simmer for around 20 minutes.
Add the chopped tomatoes, tomato paste, paprika, cumin and season with additional salt and pepper if needed.
Let it simmer for another 3 minutes, check if the lentils are cooked, and if so turn the heat off.
I served my lentils with warm Naan bread and it was a delicious dinner.
